Coffey Stills, Column Distillation and Grain Spirit

Column stills operate continuously rather than one pot charge at a time. Linked sections repeatedly vaporise and condense the liquid, allowing efficient separation and production at a range of strengths. The Coffey still is a historically influential two-column design.

Higher distillation strength generally creates a lighter spirit because fewer flavour compounds remain, but column spirit need not be completely neutral. Grain selection, fermentation, still configuration and collection strength still matter. Mature grain whisky can be subtle rather than empty.
