Oak, Ex-Bourbon, Sherry and Other Permitted Casks
Scotch matures in oak. Ex-bourbon barrels are common and may contribute vanilla, coconut, caramel and spice. Casks seasoned with Sherry or other fortified wine can contribute dried fruit, nut, spice and colour, but outcomes depend on oak species, seasoning, previous use and spirit interaction.
Permitted cask history is broader than bourbon and Sherry but is not unlimited. Previous contents must fit the Scotch product specification and must not create characteristics that conflict with traditional Scotch practice. Novel casks require careful legal review.
