Barley, Other Cereals and Grain Whisky

Barley is central to Scotch because it supplies enzymes that convert grain starch into fermentable sugar. Single Malt Scotch Whisky uses only malted barley as its cereal. Grain whisky may include wheat, maize or other cereals alongside some malted barley to support conversion.

Cereal choice affects yield, texture and flavour potential, but the final character also depends on fermentation, distillation strength and maturation. Grain whisky should not be dismissed as neutral filler: well-matured examples can show delicate cereal, fruit, vanilla and waxy notes.
